Vision inspection has changed considerably in a short time, and Baking & Snack asked us to explain how.

KPM Analytics' Andrew McGhie contributed to Dan Malovany's article on product inspection technology for bakery and snack production.

A few points Andrew raised:

  • Older vision systems check preprogrammed tolerances for size, shape, and bake color. AI-based systems are trained on images of real products, so they learn the patterns and texture variations that rule-based logic cannot describe.
  • Vision also covers a gap that other technologies leave open. Plastic film, rubber gasket fragments, and pieces of protective equipment are not detected by metal detectors and are difficult for X-ray to flag reliably.
  • And no single technology sees everything. Metal detection, X-ray, and vision each serve a distinct purpose, which is why layered inspection matters.
